This easy chocolate zucchini cake is the perfect 3 ingredient cake to put together when you’re short on time but want to serve an impressive dessert. It’s a perfectly moist and healthy zucchini chocolate cake that uses no oil!
I love sneaking zucchini into my recipes and desserts and even oatmeal to add a boost of fiber and to use up all of the leftover zucchini from my garden.
The best part about this 3 ingredient chocolate zucchini cake is that you won’t even be able to taste or see the zucchini!
This recipe is a great way to use up all of the extra zucchini you may have and make good use of the abundance of zucchini during summer and spring.

Ingredients and Substitutions
Zucchini: The shredded zucchini is the secret ingredient for a moist and healthy zucchini chocolate cake. For this recipe, we’re gonna need 2 cups of grated zucchini or about 1 whole large zucchini. (about 12 oz)
Chocolate Cake Mix: Use any chocolate cake mix that you like. I made this 3 ingredient cake with Betty Crocker chocolate cake mix.
Eggs: Use two large room temperature whole eggs. The eggs help bind the ingredients together in this cake.
Optional – 1/2 cup mini chocolate chips: For a super yummy twist on this easy chocolate zucchini cake
Substitutions: To substitute zucchini in this recipe, you can use bananas, applesauce, or vegetable oil.
To substitute chocolate cake mix, use vanilla cake mix or yellow cake mix + 1/3 cup unsweetened cocoa powder.
To substitute eggs: Make a chia egg by mixing 1 tbsp ground chia seeds(or flax seeds) with 3 tbsp of water. So to replace 2 eggs mix 2 tbsp ground chia seeds with 6 tbsp of water.
How to Make The Healthy Zucchini Chocolate Cake
Here’s how to make this chocolate cake mix zucchini cake recipe step-by-step.
Step 1: Preheat oven to 350 F (175C) Grate zucchini with a box grater or a food processor. Note: There’s no need to peel the zucchini beforehand.
Step 2: In a large bowl, combine cake mix, zucchini, and eggs until well combined.
Step 3: Grease a baking pan, pour in the cake mix and bake in a preheated oven at 350 F for 30 minutes.
Step 4: Optional step but highly recommended: Sprinkle 1/2 cup chocolate chips on top of the cake before baking. This will add so much extra flavor!
Step 5: You will know the cake is ready when the middle has set or when you insert a toothpick in the middle and it comes out clean. Let the cake cool and serve!
